Slow Cooker Beef Stew
Its was Delish!!
Here's how it went:
I used 2 lbs of "BEEF CHUCK UNDER BLADE ROAST BONELESS" (I think any boneless roast will be good)
1 can of tomato sauce
1 envelope of french onion soup
(and veggies I had on hand)
1 green pepper
1 red pepper
1 medium onion
3 plum tomatoes
2 cups (about)of carrot matchsticks
6 petite red potatoes
1 can of corn
Salt and Pepper to taste
I chopped up all veggies. Put in the meat first then spread all veggies over. Next sprinkle the french onion soup. And last but not least add the can of tomato sauce. Cover and cook on high for about 6 hours, till meat is soft enough to shred.
My family enjoys it with rice. I like it in a bowl w a squeeze of lemon. However you choose to serve it, ENJOY!

*Slow Cooker*
I <3 my slow cooker!! Its so easy and inexpensive. Since its a slow and long cooking process you can buy tough meats that cost less. I went to the supermarket and saw the bottom round steaks BOGO Free!! I stocked up!! I'm putting together my recipe for my pot roast to share w you all. What is your favorite slow cooker recipe??

Disappointing news
So I got some news this morning that let me down a little. Let's just say I didn't get what I wanted. But on the other hand...my family loves when I I'm sad or down <jk>. It makes me a great cook. LOL. I went into the kitchen and cooked up a yummy breakfast. Its such an outlet. I felt like a failure and then went to the kitchen an felt on top if the world.
The Kitchen lifts my spirits.

Spicy Cucumbers
2 medium cucumbers
Rice vinegar
Red pepper flakes
Salt
Sugar
Thinly slice the cucumbers. Lay in a flat container. Add red pepper flakes to taste, I usually add 1 teaspoon. Then add 1 teaspoon each of sugar and salt. Now add enough rice vinegar to cover the cucumbers. Refrigerate 1 hour (no more than 24) and ENJOY.

2 cans of corn
2 shredded carrots
1 green pepper, finely chopped
1 red pepper, finely chopped
1 small red onion, finely chopped
1 cup of mayonnaise
Juice of 1 medium lime
Mix all ingredients. Refrigerate for about an hour.

Experimenting
I love trying something new.I highly dislike routine and same-ol'-same-ol'. And when it comes to cooking and it actually comes out good...its a high! Hahahaha! I don't even write recipes down. Keep a mental note...usually. Not very smart though, cant always repeat a yummy dish. But I have started to do so; thanks to the inspiration of those who love my food. One thing i don't do very well is bake. Too exact. I like a pinch here and a pinch there. And sneaking in ingredients..???? A top fav!! My boys love "stuff" on their rice. I make all sorts of purees and tell them it is "frijoles" (beans). They gobble it up!! Most of the cooking i do is too unusual for my boys. They like more plain, ordinary, everyday foods. But i still try. A rule in my house is that they have to finish something on their plate in order to be "done". On most days I serve 3 items...meat,rice and a side dish. Another rule i imply is that you must taste the food in order to say that they don't like it. I will be making some delicious recipes of my own this weekend for Lorenzo's birthday Saturday. I look forward to sharing them with you.

On this gloomy day one boy shines above the rest. This little boy is so unique and special that 4 years ago on a day alot like today I was on my way the hospital to be induced but noooooo Lorenzo Jose decided he was coming on his own terms. I went into labor on my way there. I ♥ my Lolo!! 4 already. =)

Lorenzo's 4th Birthday Party
I am very much so looking forward to my sons birthday party this weekend. I will be making potato salad, meatballs, corn salad, and chicken buffalo chicken dip. Yummm!!!! What are some of your favorite party/picnic foods?
